    Raw Key Lime Pie

    Best for Vata & Pitta; ok for all doshas in moderation

     

    Crust:

    • 2 cups raw, unsalted cashews (or any nuts from your dosha “favor” column)
    • 1⁄2 cup shredded, unsweetened coconut
    • 1 cup pitted dates
    • 1⁄8 teaspoon sea salt

     

    Filling Ingredients

    • 1 large avocado, pitted and peeled
    • 1 1⁄2 cups raw cashews, soaked in water for at least 2 hours and drained
    • 1⁄2 cup coconut oil, liquid
    • 1⁄2 cup freshly squeezed lime juice
    • 1⁄4 cup pure maple syrup or agave nectar
    • 1 teaspoon vanilla extract
    • Pinch sea salt
    • 1 tablespoon lime zest (optional)

    To make the crust, place the cashews, coconut, pitted dates and sea salt to your food processor and pulse until the ingredients are finely ground. They should stick together when pressed.

    Press the crust ingredients evenly into the bottom of on oiled, 9-inch springform pan.

    Blend the filling ingredients in a food processor until silky smooth. Spread the filling over the crust. Chill the pie in the refrigerator for at least four hours. Cut into slices and enjoy!
